Poached beef marinated in miso with summer vegetables and herbs
Tender pieces of beef marinated in a mild miso sauce, then gently poached to preserve their tenderness. Served with a selection of summer vegetables. A dish that is light, fragrant and full of umami.

For the marinade:

white miso paste
1 tbsp
peanut oil
1 tsp
Dijon strong mustard
1 clove
garlic, minced
1 tsp
fresh ginger, grated
For the vegetables:
50 g
Chinese cabbage, sliced
50 g
cucumber, sliced
50 g
cherry tomatoes, halved
20 g
red radish, thinly sliced
30 g
pickled white onions
For garnish:
10 g
mixed fresh herbs (such as cilantro, basil, and mint)

- In a bowl, combine 2 tbsp white miso paste, 1 tbsp peanut oil, 1 tsp Dijon strong mustard, 1 minced garlic clove, and 1 tsp grated fresh ginger. Add the 200 g beef fillet cubes and marinate for 15 minutes.
- While the beef is marinating, prepare the vegetables: slice 50 g Chinese cabbage, 50 g cucumber, halve 50 g cherry tomatoes, and thinly slice 20 g red radish.
- In a pot, bring water to a gentle simmer. Add the marinated beef cubes and poach for 8-10 minutes, or until just cooked through and tender.
- Drain the beef and arrange on a serving plate with the prepared vegetables: 50 g Chinese cabbage, 50 g cucumber, 50 g cherry tomatoes, 20 g red radish, and 30 g pickled white onions.
- Garnish with 10 g of mixed fresh herbs such as cilantro, basil, and mint before serving.
For added flavor, reserve some marinade to drizzle over the vegetables before serving.
