Grilled fillet of sea bass, green beans with smoked tomato sauce, lime
When tomato meets cardamom and lime, magic happens. Then, we added crunchy green beans to accompany this perfectly cooked grilled sea bass.

For the smoked tomato sauce:
100 ml
tomato broth

cherry tomatoes, halved

onion, finely chopped

garlic, minced

smoked paprika

ground cardamom
0.25 tsp
fine salt

ground white pepper

lime, juiced

- Preheat the grill to medium-high heat.
- In a saucepan over medium heat, add 1 tsp olive oil. Sauté 0.5 piece finely chopped onion and 1 clove minced garlic until translucent.
- Add 50 g halved cherry tomatoes, 100 ml tomato broth, 0.25 tsp smoked paprika, 0.25 tsp ground cardamom, 0.25 tsp fine salt, and 0.25 tsp ground white pepper. Simmer for 10 minutes. Blend until smooth for the smoked tomato sauce.
- Grill 150 g sea bass fillet for 3-4 minutes per side until cooked through. Squeeze 0.5 piece of lime juice over the fish.
- Meanwhile, blanch 100 g fine green beans in boiling water for 3 minutes, then drain and set aside.
- Serve the grilled sea bass with green beans and the smoked tomato sauce.
