Chicken balsamic, seasonal vegetables with mint

- Season the 200 g chicken breasts with salt and black pepper to taste.
- Heat 1 tbsp of olive oil in a skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side, or until cooked through and golden brown. Remove from skillet and set aside.
- In the same skillet, add another 1 tbsp of olive oil. Sauté 30 g of chopped stem onions for 2 minutes.
- Add 50 g of sliced courgette, 50 g of fine green beans, and 50 g of green peas. Cook for another 5 minutes until the vegetables are tender-crisp.
- Add 30 g of chopped candied tomato and 2 tbsp of balsamic vinegar to the skillet. Stir well to combine and cook for an additional 2 minutes.
- Return the chicken breasts to the skillet, coating them in the balsamic mixture. Garnish with 5 g of chopped fresh mint before serving.
