Beef stir-fry with green asparagus and broccoli in nutty butter
A deliciously tender beef stir-fry with crisp green asparagus, accompanied by creamy broccoli purée with nutty browned butter, for a gourmet and refined touch.

green asparagus, trimmed and cut into 5 cm pieces

For the nutty butter:
30 g
butter
1 tbsp
casa olive oil
1 piece
baby onion, finely chopped
0.5 piece
orange carrot, julienned
fine salt, to taste
ground white pepper, to taste
fresh thyme leaves, for garnish

- Bring a pot of salted water to boil. Add 100 g of broccoli florets and cook until tender, about 5 minutes. Drain and blend into a smooth purée.
- In a skillet over medium heat, melt 30 g of butter until it turns golden brown and releases a nutty aroma. Set aside.
- In the same skillet, heat 1 tbsp of casa olive oil over high heat. Add 150 g of thinly sliced beef and stir-fry until browned, about 3 minutes.
- Add 1 piece of finely chopped baby onion, 0.5 piece of julienned orange carrot, and 100 g of green asparagus pieces to the beef. Stir-fry for another 3-4 minutes until vegetables are tender-crisp.
- Stir in the nutty browned butter, season with fine salt and ground white pepper to taste, and finish with a squeeze of juice from 0.5 piece of lime. Garnish with fresh thyme leaves before serving.
