Palak, artisanal tofu
This delicious traditional Indian dish contrasts the sweetness of the delicately spiced spinach with the artisanal tofu of exceptional taste and texture

- Heat 1 tbsp of olive oil in a large pan over medium heat.
- Add 1 piece of finely chopped shallot, 1 tbsp of grated fresh ginger, and 2 cloves of minced garlic. Sauté until fragrant, about 2 minutes.
- Add 200 g of chopped spinach and cook until wilted, about 3-4 minutes.
- Stir in 150 g of silken tofu, 50 g of halved cherry tomatoes, 1 tsp of garam masala, and 0.5 tsp of turmeric. Cook for another 5 minutes, stirring gently.
- Season with salt and pepper to taste. Serve warm.
