Ingredients

200 g spinach, washed and chopped
150 g silken tofu, cubed
50 g cherry tomatoes, halved
1 piece shallot, finely chopped
1 tbsp fresh ginger, grated
2 cloves garlic, minced
1 tsp garam masala
0.5 tsp turmeric
1 tbsp olive oil
salt, to taste
pepper, to taste

  1. Heat 1 tbsp of olive oil in a large pan over medium heat.
  2. Add 1 piece of finely chopped shallot, 1 tbsp of grated fresh ginger, and 2 cloves of minced garlic. Sauté until fragrant, about 2 minutes.
  3. Add 200 g of chopped spinach and cook until wilted, about 3-4 minutes.
  4. Stir in 150 g of silken tofu, 50 g of halved cherry tomatoes, 1 tsp of garam masala, and 0.5 tsp of turmeric. Cook for another 5 minutes, stirring gently.
  5. Season with salt and pepper to taste. Serve warm.
