Beef Goulash, low in carbs

In our version of a traditional Hungarian peasant soup, to a delicious vegetable and beef stew, red beans, tomato sauce, we have added smoked paprika. This dish is rich in flavour and vegetables - a comforting dish that everyone will enjoy. For this low in carbs version, we have removed potatoes.

Ingredients

200 g beef aiguillette barone
200 ml beef broth
50 g orange carrot, diced
50 g mushrooms, sliced
30 g tomato paste
50 g red pepper, chopped
50 g green pepper, chopped
50 g onion, chopped
1 tbsp red wine vinegar
2 tbsp double tomato paste
1 tbsp sunflower oil
2 cloves garlic, minced
1 tsp sweet paprika
1 tsp fine salt
0.5 tsp ground cumin
0.5 tsp hot ground paprika
1 leaf bay leaf

  1. Heat sunflower oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
  2. Add garlic, sweet paprika, hot ground paprika, and ground cumin to the pot, stirring until fragrant.
  3. Add beef aiguillette barone and sear until browned on all sides.
  4. Stir in beef broth, tomato paste, red wine vinegar, bay leaves, sliced carrots, mushrooms, red and green peppers. Simmer for 20 minutes.
  5. Season with fine salt to taste and remove bay leaves before serving.
