Aubergine Parmigiana, grilled beef
What a treat! Beautiful, well-executed summer vegetables, a few simple steps and it's off to lunch or dinner with the flavours and colours of summer. What's more, it's low in carbohydrates! Enjoy your meal!

faux fillet of beef

buffalo mozzarella, sliced

grated parmesan cheese

huile d'olive casa
2 cloves
garlic, minced

white pepper, ground

- Preheat the grill to medium-high heat.
- Brush the aubergine slices with 1 tbsp of huile d'olive casa and season with a pinch of white pepper. Grill for about 5 minutes on each side until tender and slightly charred. Set aside.
- In a pan over medium heat, add the remaining 1 tbsp of huile d'olive casa. Sear the faux fillet of beef for about 3 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest.
- In a baking dish, layer the grilled aubergine, sliced bunch tomato, and buffalo mozzarella. Sprinkle with minced garlic and grated parmesan cheese. Place under a grill for 5 minutes until the cheese is melted and bubbly.
- To serve, slice the beef and plate alongside the aubergine parmigiana. Garnish with fresh basil leaves. Enjoy your meal!
